what camera do you use for this type of angle shoots?

Cheap 5MP coolpix camera. Point and shoot while you pan the scene from left to right (or right to left). The use processing software to "stitch" the frames together. I use Microsoft ICE because it is free:

The I use another free program: Photoscape to touch up and sharpen the image:
